Ingredients:
- 1 Bag of Reese's Peanut Butter Cups Miniatures
- 1/2 cup (1 stick) butter, softened
- 1/2 cup sugar
- 1/2 cup packed light brown sugar
- 1/2 cup creamy peanut butter
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 1/2 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- Preheat oven to 375
- Remove the wrappers from the Reese cups
- Spray a mini muffin tin with non-stick baking spray
- In a medium bowl, combine flour, baking soda, and salt. Set aside
- In a stand mixer, beat butter, sugar, brown sugar, peanut butter, egg and vanilla until fluffy
- Gradually add flour mixture to butter mixture, beating until well blended
- Shape dough into approximately 1 inch balls, and place in mini muffin cups (do not smooth or flatten)
- Bake 10 to 12 minutes, until puffed and lightly browned
- Remove from one and immediately press Reese cup into the center of each cookie
- Cool completely in the muffin pan
- Serve & enjoy!
