Ingredients:
- 1 cup flour
- 1/3 cup unsweetened cocoa
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sugar
- 1/3 cup butter, softened
- 1 teaspoon vanilla extract
- 1 large egg
- 2/3 cup dried tart cherries
- 3 tablespoons semisweet chocolate chips
- Non-stick cooking spray
Directions:
- Preheat oven to 350
- Combine flour, cocoa, baking powder, baking soda, and salt in a large bowl, stirring with a whisk to combine. Set aside
- Place sugar and butter in a large bowl and beat with a mixer at high speed until well blended
- Add vanilla and egg and beat well
- With the mixer on low speed, gradually add the flour mixture and beat until just combined
- Fold in cherries and chocolate chips
- Spray cookie sheet with non-stick spray and then drop dough 2 inches a part onto it (approximately 1 tablespoon in size)
- Bake for 10-11 minutes, or until just set
- Remove from oven and let cool on the cookie sheet for about 5 minutes
- Remove from sheet and let cool completely on wire cooling racks
